Filling for Japanese Fruit Cake 8 egg yolks 2 cups sugar 1 lb. raisins 1 lb. walnuts 1 lb. pecans 1 grated coconut (or packaged equivalent) 1 cup butter Cook all of the above ingredients in a double boiler. As it cooks, the filling will get dark in color.

The raisins and nuts should be ground together in a food grinder before starting the filling. When the filling is ready, put it on by hand. It will just stick on the cake. This makes a very large and beautiful cake for a Christmas treat and will serve a large family. (The amount of raisins and nuts can be varied.) Housemother ishonoree at St.

Dominic Students, faculty and alumnae of St. Dominic School of Nursing honored Ana Isasi Blanco at a combination Tenth AnniversaryFarewell party. Mrs. Blanco, who has served as housemother at the school for the past 10 years, retired this month. The serving table was decorated with the new silver epergne and candelabra, a gift of the school's alumnae on the 25th anniversary of the school.

Mrs. Blanco was presented gifts, expressions of love, and best wishes. She expressed her appreciation for the happiness she had felt in her "second home" and said that the presence of her "girls" was a special tribute of thanks to her. Mrs. Blanco will move to Jacksonville, where she will live with her son Juan.

Her grandfather, Jones S. Hamilton, built the original Belhaven (for his bride shortly after they were married, as their home) and served the State of Mississippi as Adjutant General during the Civil War and again during the Spanish-American War. Betty has edited a stitchery book, Pattern Book Designs of the Nineteenth Century, which is a collection of patterns from her grandmother and her great-aunt. Very innovative in her cooking, she is always trying out new recipes, and she enjoys taking cooking courses. Her beautiful, formal dining room is done in red and white, and her China is of the same motif, making a very elegant table.

Betty is the wife of Dr. Chester Lake. Their son, Chet, is teaching high school biology and earth science; son Rob, is a sophomore at Ole Miss; and Tish is an eighth grader at Prep. Sweet potatoes "in society" is with raisins, nuts, and marshmallows.

She also has a great "short-cut" for the cheese sauce over the cauliflower. Simply use a can of Campbell's Cheese Soup, add milk, Worcestershire and grated onion, if desired. Heat, and pour over steamed cauliflower. Olive Cheese Puffs 1 cup sharp cheese (New York) Vz cup all purpose flour teaspoon salt 3 tablespoons butter 'A teaspoon paprika 24 stuffed olives (large) Blend grated cheese and butter. Sift dry ingredients and mix well.

Wrap about 1 teaspoon of cheese dough around each olive, completely covering olive. Freezer wrap and freeze. Unwrap desired number of frozen puffs and arrange on ungreased cookie sheet. Bake at 400 degrees for 10 to 15 minutes or until golden brown. Baked Ham and Stuffing 10 pound ham 4 cups toasted bread crumbs 8 hard-boiled eggs, sieved 1 teaspoon ground cloves 'A teaspoon nutmeg 3 cloves garlic, minced 1 teaspoon pepper small jar India relish 1 teaspoon celery seeds 1 tablespoon mustard 72 cup brown sugar V2 cup pickle juice Vz cup juice from ham 3 egg whites, beaten Cook ham until tender enough to remove bone easily, or let butcher remove.

Fill cavity with dressing made by combining remaining ingredi ents and use any extra dressing to coat ham. Coat evenly. Wrap ham tightly in damp cloth and cool. May be refrigerated overnight. Serve at room temperature with Jezebel Sauce.

Jezebel Sauce 1 Jar pineapple preserves (10 oz.) 1 Jar Bahama mustard (JJ 14) 1 Jar apple jelly (18 oz.) 1 bottle horseradish (5 oz.) Salt and pepper to taste Blend Frozen Tomato Salad 1 3 oz. package cream cheese Vz cup sieved cottage cheese 1 cup mayonnaise or cooked dressing l'z teaspoon salt 'A teaspoon red pepper 18 teaspoon ginger 1 tablespoon Worchestershire sauce 2 tablespoons grated onion 1 can tomato juice (1 pint, 2 oz. can) 2 cans crushed pineapple, well drained Cream the two cheeses until smooth. Add mayonnaise, salt, pepper, ginger, Worchestershire, onion and tomato juice. Beat well, then stir in pineapple.

Turn into 2 trays and freeze for 2 hours. Remove from trays and beat thoroughly and freeze again. Japanese Fruit Cake 8 egg whites 1 cup butter 2 cups sugar 1 cup milk 3 cups flour 'A teaspoon salt 2 teaspoons baking powder 1 teaspoon vanilla Beat whites until stiff, but not dry. Cream butter and sugar until light in color. Sift dry ingredients together.
